Impact:The project enabled the sustainable production of selenium-enriched yeast using cheese whey, a major dairy byproduct in Argentina and Ecuador, as a fermentation substrate. This approach supported the development of functional nutritional supplements aimed at slowing the progression of neurodegenerative diseases such as Huntington's Disease, while also addressing environmental challenges by reducing the pollutant impact of whey waste. Through the creation of high-value products such as Se-yeast-fortified beverages and yogurts with strong market potential, the project advanced cleaner production methods, improved resource efficiency, and strengthened South-South cooperation in the fields of biotechnology, public health, and environmental sustainability.
